A heaping pile of black beans covered in organic vegetables, slices of perfectly ripe avocado, a sprinkle of cheese and a dollop of organic cream cheese is just one of the many ways you can build the “ultimate” taco.
Tacos are perfect for a midweek lunch when you need to change your typical salad for something a bit more spicy, but still packed with vegetables and protein.

Black Bean Tacos: * Try to use organic and local products when possible.
(Serves 2-3 People)
1 pack of soft corn tortillas
1 can of organic black beans (you could also use ground beef or chicken combined with southwest taco mix for added spice)
1 organic tomato, sliced
1 avocado, sliced
1 cup of organic, shredded, cheddar cheese
3 TBSP. of organic cream cheese
1 handful of organic cilantro
1: Begin by cooking your protein of choice, and spreading evenly onto each corn tortilla.
2: Take your chopped tomato and toss onto each taco followed by your avocado.
3: Sprinkle as much cheese as you desire and then add a tablespoon of sour cream on each taco. Top with cilantro. Can be served warm or cold.
