Mango salsa is the perfect combination between sweet and spicy, and can be paired with almost any protein. OBC Eats is taking this Mango salsa spread and putting it over shrimp on a bed of mixed greens. The ultimate goal? A light and fruity salad that is easy to make, doesn’t leave you feeling bloated, and packs in a mix of protein, and vegetables.
Mango Salsa Salad (Try to use local and organic ingredients when possible):
Serves 4-5 People
Mango Salsa:
1 sliced mango
1 red onion
½ Jalapeno pepper
1 red pepper
1 pineapple
1 squeezed lime
1 tsp. of salt
Shrimp Salad:
15-20 cooked shrimp
1 bag of organic mixed greens
Directions:
Mix together all ingredients for the Mango Salsa and let it sit in the fridge for about an hour. Then form a bed of lettuce, add shrimp and top with a heaping of the mango salsa. I love to mix my greens into the salsa for a light and tangy summer salad.
