Lunch today for OBC Eats was inspired by beautiful Greek cuisine. Known for their unique and delicious Mediterranean dishes, I decided to put together a traditional Greek lunch consisting of falafel, pita bread, hummus, olives, grape leaves and tabouli.
The style of this plate is to have a variety of multiple types of foods to pick from rather than just one or two main food groups. This type of eating is a simple way to ensure you are eating foods from many groups and giving your body the nutrients it deserves.
*Try to use local or organic ingredients when possible.
Serves 3-4 People
6 small falafel balls
1 packet of pita bread
1 small container of hummus
1 container of tabouli
1 container of fresh green and purple olives
6 stuffed grape leaves
1 bag of kale
1: Lay the pita bread flat and add a generous dollop of hummus spread across the bread.
2: Chop the kale into small pieces and sprinkle over the hummus and pita bread. Then add the tabouli and top with falafel.
3: On the side, I added the grape leaves and olives, as well as extra hummus to dip my pita bread in.
